TOLEDO, Ohio — Check out this festive recipe for cake balls as prepared by Brianna Stewart of Jera's Heavenly Sweet on Good Day.
Ingredients
- 1 1/4 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/2 cup unsalted butter, softened
- 3/4 cups granulated sugar
- 2 large eggs
- 2 tsp. pure vanilla extract
- 1/2 cup buttermilk
- 1-2 tbsp. vanilla frosting
- Melting chocolate
- Sprinkles
Instructions
- Preheat oven to 350 degrees Fahrenheit and grease a 9-inch cake pan
- In a medium bowl, whisk together flour, baking powder and salt, then set aside.
- In a large mixing bowl using an electric hand mixer (or stand mixer), beat butter and sugar on medium-high speed for five minutes until thick and fluffy, scraping down the bowl as needed.
- Add eggs, one at a time, beating well with each addition then scrape down the bowl. Add vanilla extract and beat to combine.
- Reduce mixer to medium speed and add the flour mixture in thirds alternating with the buttermilk, allowing the flour and buttermilk to incorporate with each addition. Beat until just combined and smooth.
- Pour batter into the prepared cake pan and bake on the center rack at 350 degrees for 28-30 minutes. Once cool enough to handle, flip out of the pan and let cool completely on a wire rack.
- Rip apart cake into small pieces into a bowl then add 1-2 tbsp. of frosting until the cake holds together when you ball some up in your hand. Using a tablespoon measuring spoon scoop out cake and roll in your hands to make balls and place on a flat surface with edges like a baking sheet.
- Put the cake balls in the freezer for 30 minutes to 1 hour.
